L\u2019homme peut p\u00e9trir et cuire lui-m\u00eame son pain, faire pousser des l\u00e9gumes. Mais les b\u00eates de la chair desquelles il se nourrit sont, \u00e0 l\u2019exception des volatiles et des lapins, d\u2019une taille telle qu\u2019\u00e0 moins de les conserver par salage ou fumage, il doit les partager avec plusieurs de ses semblables. Aussi, d\u00e8s que dispara\u00eet le mode de vie patriarcal ou tribal qui maintenait group\u00e9es un certain nombre de personnes et permettait l\u2019abattage des gros animaux, la boucherie devient-elle une des principales activit\u00e9s sociales.<\/p>\n\n\n\n<p>Au d\u00e9but, le boucher \u00e9tait celui qui abat les boucs (en fait les chevreaux).
